Creamy Chicken Soup

This recipe was from Modern Honey. I did a variation of it. Instead of putting it in the crockpot I used a different method. Stove top. It doesn’t take long and it allows you to cook with your kids. My daughter has been wanting to cook with me every time now and it’s a great way to bond with her. With this craziness of covid and her not being able to attend actual classes, I try to do more activities with her. Cooking is an important skill for any kid to learn and a fantastic learning experience. All you need is a large pot or stock pot. I used a giant one my mom gave me. It’s only my mom and dad at home now and she doesn’t need to make huge batches anymore so she gave me the pot to use. It’s great for soups and I get to make a meal that will last a whole week.

Creamy Chicken Soup

Here’s what you are going to need:

  • 2 Tbsp Olive oil
  • 1 Large Onion (chopped)
  • 2 Jalapenos
  • 4oz Can green chiles
  • 1 to 2 Tbsp minced garlic
  • 16oz Medium chunky salsa
  • 15.5oz Pinto beans
  • 15.5oz Black beans
  • 2tsp chili powder
  • 1tsp cumin
  • 1 small to medium sized Rotisserie chicken (chopped into 1/2 inch pieces)
  • 32oz Low sodium chicken stock
  • 1/2 cup Low fat heavy cream

Garnishes (optional):

  • Sour cream
  • Cilantro
  • Shredded cheese
  • Avocado


  1. Heat your pan over medium heat. Put olive oil into the pan and saute onions, jalapenos and green chiles. Stir and saute until onions are translucent. Add garlic and saute for about 1 minute.
  2. Add the chili powder and cumin. Stir until aromatic.
  3. Add the salsa and mix.
  4. Add the chicken and beans. Mix until combined.
  5. Add the chicken stock and heavy cream.
  6. Let boil and then simmer on low for 30 minutes.
  7. Then serve with garnishes.


The original recipe used raw meat and the entire meal was cooked in a crockpot. I decided to use rotisserie chicken instead to speed up the cooking process and to lessen clean up time. I also lessened the calories by using low fat heavy cream. You could also use low fat cheese in the soup. We chose to use regular. The garnishes and toppings are optional and if you would like a lower calorie version, you can omit the toppings. I used a lot of garlic because we love it. You can use less of it in your soup. For the beans, you can definitely use the dried version. Just follow the directions on the package. This is only mildly spicy but fr those who don’t like spicy food, you can omit the chiles altogether. Enjoy!
